Can I tag the MP3 with artist and album information?

Yes, and it is a genuine gain over WAV, which has nowhere dependable to store any of it. MP3 carries title, artist, album, year, track number and embedded cover art in the container itself, so a music library files it correctly without a manual pass. Nothing beats MP3 for compatibility — car stereos, gym equipment, DAPs and twenty-year-old hardware all read it without question.
What happens to multichannel audio when converting WAV to MP3?

It is folded down to stereo, because MP3 has no practical multichannel mode. The downmix uses the standard coefficients so centre-channel dialogue stays clear and the surrounds are mixed in at reduced level. Anything that depended on discrete channel placement is gone once that happens. MP3 is technically outclassed by AAC and Opus at every bitrate, cannot store more than two channels usefully, and always adds a small encoder delay.
Will a very large WAV file upload successfully?
