What if the source is a scan with no real text in it?

Then the conversion produces a picture of the text rather than the text itself, and searching it finds nothing. Run /pdf-ocr/ to add a recognised text layer first; optical character recognition turns the scanned pixels into selectable, searchable characters that the conversion can then carry through properly.
What is a PPTX file underneath?

A ZIP archive of XML parts, together with the images and fonts those parts refer to. That is why one barely shrinks when it is archived, why a damaged one can sometimes be partly recovered instead of being a total loss, and why software that is not the original application can open it at all — the layout was published rather than reverse-engineered. It is also why the extension matters more than it looks: rename it and the tools that recognise it by name stop opening it, though not a byte inside has changed. PPTX is the Office Open XML presentation format PowerPoint has used by default since 2007.
