Heavily designed source layouts convert less cleanly than plain prose, so expect to tidy spacing on anything built on a complex grid.
It opens everywhere, but it is a compatibility choice rather than a good one. The binary formats predate the XML packages, carry macro payloads that many mail servers strip on sight, and are being steadily deprecated by Microsoft itself. Use them when a specific piece of old software demands them, and the XML format otherwise. DOC is undocumented in practice, opaque to modern tooling, and Microsoft itself has been trying to retire it since 2007.
Then the conversion produces a picture of the text rather than the text itself, and searching it finds nothing. Run /pdf-ocr/ to add a recognised text layer first; optical character recognition turns the scanned pixels into selectable, searchable characters that the conversion can then carry through properly.
EXIF travels with the embedded image data, which means GPS coordinates can end up inside a document you intend to publish. Use the strip-metadata option during conversion if the DOC is going anywhere public — once it is embedded it is no longer obvious that it is there.

A JPG can carry print colour, and a document renders on a screen, so the conversion maps those inks into RGB — and the ink gamut contains deep cyans and rich blacks that a screen cannot reproduce, which come back a little duller. JPG has no transparency, degrades further every time it is re-saved, and produces visible blocking on flat colour and sharp text.
