Is the older binary Office format still a safe bet?

It opens everywhere, but it is a compatibility choice rather than a good one. The binary formats predate the XML packages, carry macro payloads that many mail servers strip on sight, and are being steadily deprecated by Microsoft itself. Use them when a specific piece of old software demands them, and the XML format otherwise. BMP is gigantic — a 12-megapixel photo is around 36 MB — and no browser treats it as a sane web format.
How big will the BMP files be?

Larger than you might expect, because BMP keeps every pixel exactly rather than approximating. A 1080p still lands around 2-5 MB and a 4K still around 6-15 MB, so a long extraction run adds up quickly. That is the right trade when the images feed further processing, and the wrong one when they are going straight onto a web page. BMP usually stores completely uncompressed pixel rows with a small header, which is why it is so simple to parse.
Can I convert only part of the DOC instead of all of it?

No. There is no page setting for DOC files, so every page is rendered as its own BMP and you keep the ones you need. If you only want the first page, convert the DOC to PDF and then use the PDF to BMP converter, whose Pages menu offers First page only.
Do I get one image per page?
